When people think of specialty coffee, they often imagine coffees from Ethiopia, Colombia, or Brazil. But India has a unique coffee treasure that stands apart from the rest of the world — Monsooned Malabar Coffee.
This extraordinary coffee is not defined by a special variety or growing region alone. Instead, its distinctive character comes from a fascinating post-harvest process inspired by history and nature.
The Origin of Monsooned Malabar
Hundreds of years ago, Indian coffee was transported to Europe in wooden sailing ships. During the long sea journey around the Cape of Good Hope, coffee beans were exposed to humid monsoon winds and sea air for several months.
By the time the coffee reached Europe, the beans had changed dramatically. They became larger, pale golden in color, less acidic, and developed a smooth, earthy flavor profile.
European buyers loved these characteristics.
When modern shipping reduced transit times, this natural transformation disappeared. To recreate the beloved flavor profile, Indian coffee producers developed the Monsooning Process, giving birth to the world-famous Monsooned Malabar Coffee.
How Monsooned Malabar Coffee is Made
Step 1 – Selection of Premium Green Beans
High-quality Arabica or Robusta beans are carefully selected from Indian coffee-growing regions.
Step 2 – Spreading the Beans
The green coffee beans are spread in large open-sided warehouses along India's Malabar Coast.
Step 3 – Exposure to Monsoon Winds
During the monsoon season, from June to September, humid sea winds naturally flow through the warehouses.
Step 4 – Regular Turning and Monitoring
Workers continuously rake and turn the coffee beans to ensure even moisture absorption and consistent development.
Step 5 – Natural Aging Process
The beans remain exposed to monsoon conditions for approximately 12 to 16 weeks.
Step 6 – Transformation of the Beans
As moisture is absorbed, the beans swell significantly in size and change from green to a pale golden-yellow color.
Step 7 – Grading and Packing
After the monsooning process is complete, the beans are graded according to quality standards and prepared for export and roasting.
What Makes Monsooned Malabar Unique?
